And as we step into summer and the one year anniversary of being here coming up in July, I’m taking a beat to reflect on what’s working… and where we want to go next.
So this week, I’m flipping the script and turning to you.

Thai Chicken Salad with Spicy Peanut Dressing
I’d swap the honey and soy sauce in the dressing for coconut aminos to make it lower in sugar and gluten + soy-free.
You can play around with this by blending a scoop of protein powder into the almond milk and then skipping the maple syrup.
If you can’t tell, I’ve been on a sheet-pan kick lately — they’re just so easy. And this one especially with the potatoes soaking up the chicken drippings, yum. I’d toss in a few handfuls of arugula right when it comes out of the oven for an extra hit of veggies and brightness.
